Zucchini is a great vegetable for runners and here is why. Zucchini is low in calories and low in carbohydrate content. It is high in water content, making it a hydrating food which is also great for runners. Zucchini is easy to digest and finally, it contains essential nutrients, namely potassium, that helps with muscle recovery and prevents muscle cramps.

- 1 cup of bread crumbs, of choice
- ½ cup freshly grated cheese, of choice
- 2 large zucchini, sliced
- ½ cup plain flour
- 3 large eggs, beaten
- Herbs and spices, to taste
- Salt and pepper, to taste
Method
- Preheat oven to 160 deg C.
- Prepare a baking sheet on a baking tray.
- Set aside.
- In a bowl, add the bread crumbs, cheese, seasoning, salt and pepper.
- Mix and set aside.
- Beat the eggs and place in separate bowl.
- One at a time, place a zucchini slice into the flour, then dip it into the eggs.
- Then coat in flour mixture and place onto prepared baking sheet.
- Once all slices have been coated bake for 40 minutes, or until golden in colour.
