Today we have the lovely Erin Hanks from www.e-fitpt.com share her healthy banana muffin recipe with us! The perfect snack when you are always on the go. YUM!!

INGREDIENTS
  • 1 cup vanilla Greek yogurt
  • 2-3 ripe mashed bananas
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 4 tablespoons maple syrup or agave
  • 4 cups oat flour (blended oats)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 cup dark chocolate chips (optional)
METHOD
  1. Preheat oven to 180 degrees Celsius
  2. Blend the oats (I did it in my ninja)
  3. Add baking powder & cinnamon
  4. Add all wet ingredients and blend again
  5. Add choc chips at the end
  6. Pour mixture in cupcake tin (make sure you grease tin before putting in mixture - I used coconut oil spray)
  7. Bake for 20-30 mins or until golden brown
