The fuel we choose impacts our running performance. While training is essential, our diet matters too. Peanut butter is an excellent choice for great running performance, and this is why. It is rich in essential unsaturated fats that are crucial for heart health, and we know how important this is for runners. It is made up of high-quality proteins that support muscle growth and recovery, which again is important for runners, and it contains a number of of other nutrients such as fibre, niacin, and folic acid, all of which provide sustained energy for endurance.

  • 3/4 cup peanut butter, smooth
  • 15g Natvia,
  • 1 teaspoon vanilla essence
  • 2 eggs, large
  • 50g cocoa powder
  • Pinch of salt
  • Optional to add 1/2 cup dark chocolate chips
  1. Preheat oven to 220 degrees Celcius and prepare a baking tray.
  2. In a bowl, whisk the eggs and place to the side.
  3. Melt the peanut butter to soften it and place to the side.
  4. In a different bowl add half the peanut butter, Natvia and vanilla essence and eggs. Mix well.
  5. Add the cocoa powder and salt, and continue to mix.
  6. Fold in the chocolate chips, if using.
  7. Pour the batter into the baking tray, evenly.
  8. Pour over the rest of the peanut butter.
  9. Bake for 15 minutes. Extend baking time if needed.
  10. Let cool before cutting.
